Orange and Coconut Cake


 THREE EASY RECIPES TO MAKE  AN AFTERNOON TEA SPECIAL. IF YOU PREFER SOMETHING SALTY, TRY THE QUICHE, ITS A SLAP DASH RECIPE, PUT EVERYTHING IN A POT THEN IN THE OVEN OR TRY THE CAKE, MADE OF COCONUT AND ORANGES, IT WORKS WELL TOGETHER TO BRING YOU A WONDERFUL TASTE.




ORANGE AND COCONUT CAKE

1.5 CUPS ALL PURPOSE FLOUR
¾ FLAKED COCONUT 
¾ ORANGE JUICE
¾ SUGAR
1/2 CUP BUTTER ( ROOM TEMPERATURE) 
2 EGGS
1.5 TSP BAKING POWDER
2 TSP VANILLA POWDER


DIRECTIONS:

1. PREHEAT OVEN TO 350 F .

2. GREASE A LOAF PAN OR LINE A 12 CUP MUFFIN TIN WITH PAPER CUPS.

3. IN A LARGE BOWL, BEAT BUTTER WITH AN ELECTRIC MIXER UNTIL CREAMY. BEAT IN SUGAR AND THEN ONE AT A TIME ADD IN THE EGGS.

4. PLACE COCONUT FLAKES, BAKING POWDER, VANILLA POWDER AND FLOUR IN A BOWL.

5.IN THE EGG MIXTURE BEAT IN 1/3 OF THE FLOUR MIXTURE, BLEND WELL THEN ADD 1/2 OF THE ORANGE JUICE. REPEAT ADDITION AND END WITH FLOUR MIXTURE.

6. POUR THE BATTER IN THE LOAF PAN OR DIVIDE THE BATTER BETWEEN THE MUFFIN CUPS FILLING ABOUT 3/4 FULL.

7. FOR THE LOAF BAKE 30 TO 40 MINUTES OR UNTIL A TOOTH PICK INSERTED IN THE CENTER COMES OUT CLEAN. FOR CUP CAKES BAKE 20 TO 25 MINUTES.
